Pax Mondo had the pleasure of directing the inaugural Flinders Island Food & Crayfish Festival which took place in April, 2018. Described by Delicious Magazine as ‘Australia’s Hottest Food Festival,’ plans are already underway for the 2019 event.
Located in Bass Strait, North-East of Tasmania, Flinders Island is the largest island in the Furneaux Region with a population of only 926 islanders. Famous for untouched beaches with crystal clear waters, deep forestland and some of Australia’s greatest produce, the island has been a chef’s secret pantry for many years. The inaugural Flinders Island Food and Crayfish Festival was held in April 2018, the aim being to use the event as a vehicle to create island specific tourism and marketing content that drives awareness of the Flinders Island ‘brand’ and everything the island has to offer – incredible produce, a warm community, adventure and untouched beauty.
The inaugural event attracted five of Australia’s most celebrated chefs to the island (David Moyle of LongSong, James Viles of Biota, Mark LaBrooy of Three Blue Ducks, Matt Stone and Jo Barrett of Oakridge along with award-winning sommelier, Alice Chugg of Ettie’s) and sold out completely to 160 festival-goers.

Pax Mondo was contracted by The Taste of Tasmania in 2018 to conceptualise the major culinary program for the event. Pax Mondo designed the program and engaged relevant talent including contract negotiation.

Pax Mondo oversaw PR for Pumphouse Point from May 2019. until May 2020 when Covid-19 forced border closures in Tasmania. It was a privilege to represent this stunning, heritage listed property located atop Lake St Clair, Tasmania. Pax Mondo is proud to have secured major features for the property in a variety of publications including Qantas Magazine, GQ Magazine, The Age Good Food, Get Lost Magazine, The Urban List, The Mercury and more.

As part of Cookingbooking.com, Pax Mondo worked with six of Melbourne's best chefs to pull together a series of cooking classes that were carried out within their respective restaurants. Each cooking class culminated in a sit-down long lunch with matching beverages.
The event series was covered in a number of prominent publications including Broadsheet, The Age Good Food and 3AW’s ‘A Moveable Feast’ program.

A series of invitation only dinner parties for late-stage startups held at unique locations around Melbourne and Victoria
Startup Victoria asked us to deliver a series of dinner party events with the aim of engaging late-stage startups in Melbourne and Victoria. The idea was to offer a night away from emails and computer screens where Founders could enjoy, connect and contemplate the future of the industry over beautiful food and wine in unique locations around Melbourne and Victoria. To deliver this, we collaborated with some of the best chefs in the city to ensure money-can't-buy experiences created exclusively for our guests.

Founded by Amanda Vallis, Cooking Booking was a successful curated booking website that invited people to participate in the universal language that is food.
Founded in 2015, Cooking Booking's social media following has since grown to over 12,000.
A luxury lodge on King Island, Vallis & Co. represented Kittawa Lodge from February 2020 until March 2021, securing a range of features in high profile publications including Good Weekend, Delicious Magazine, Tas Weekend, The Weekend Australian and Hunting For George.
